Nevadillo Negro
Native to the Sierra de Montoro-Adamuz, its oil is highly valued for its richness in polyphenols (natural antioxidants). Very neighboring in its production, it adapts better to the extreme conditions of the mountain range, high slope and shallow soils. In clear decline due to its low productivity.
High fruitiness, aromas of grass, tomato and green almond. Very complex as a whole with touches of spiciness and bitterness at the end, very balanced.
Sikitita
A recently created variety by the University of Cordoba, it is a cross between the picual and arbequina varieties and was created to respond to the needs of hedgerow olive groves. It is early in production and has a better fat content than arbequina.
Medium-high fruitiness, notes of green apple, green banana peel and a soft touch of tomato and freshly cut grass, with a sweet entry on the palate, with balanced and pleasant spiciness and bitterness in the aftertaste.
Arbequina
Olive tree variety originally from Palestine, introduced in Spain in the 17th century by the Duke of Medinaceli. It is characterized by its low stature and very small round fruit.
Medium fruity with a sweet entry sensation in the mouth, a very low bitterness and spiciness and olfactory and taste memories of ripe fruits. If we close our eyes, it gives the sensation of smelling a baby’s fruit puree. Highly valued in confectionery.
Ecological
The cultivation of organic olive groves in the Sierra de Montoro is becoming abundant. Traditional olive groves, usually recovered to the mountain, are not very productive olive groves and that find in the organic plus a way to improve their profitability. In these olive groves different varieties coexist, predominantly picual or white nevadillo and black nevadillo. Most of these olive groves are located on slate soils, which gives the oils medium bitter and spicy attributes.
Medium fruity with characteristics of Sierra oils. Sweet and full-bodied entry, very marked green almond and grass, with very interesting hints of dried fruits in the mouth and a balanced and very pleasant aftertaste. Mild spiciness at the end on the tip of the tongue.
